The origins of the dove cake are still debated.\u00a0 Some legends trace it back to a gift offered by the people of Pavia to King Alboin, while others refer to Saint Columbanus, the Irish monk who, during Lent, is said to have transformed meat dishes into white bread doves as a symbol of peace.<\/p>\n

What is certain is that the dove has always represented prosperity, rebirth and harmony: <\/strong>values that have endured for centuries.<\/p>\n

The Colomba as we know it today entered the market in 1930, when Dino Villani, working for Motta<\/a>, adapted the panettone recipe to create an Easter product with a strong symbolic identity. From that moment on, the Colomba began its transition from artisanal specialty to structured seasonal production<\/strong>, requiring consistency and process control.<\/p>\n

A regulated product<\/h3>\n

In 2005, the Italian Ministry officially defined what can be called \u201cColomba\u201d, setting strict requirements on ingredients and production, just as for Panettone.<\/p>\n

This regulation confirms the Colomba\u2019s status as a high-value bakery product<\/strong>, where quality standards are non-negotiable and every component of the process matters.<\/p>\n

Where paper meets bakery innovation<\/h3>\n

So where does paper come into play?<\/p>\n

From the earliest large-scale productions, dove were baked in paper moulds<\/strong>, designed to:<\/p>\n
