Let’s\u00a0be precise from the start:\u00a0this\u00a0article\u00a0talks\u00a0about\u00a0greaseproof\u00a0paper\u00a0as\u00a0it’s\u00a0used\u00a0in\u00a0<\/span>industrial bakery packaging<\/span><\/b><\/a>. The\u00a0same\u00a0term\u00a0shows up in\u00a0other\u00a0industries\u00a0with\u00a0different\u00a0technical\u00a0meanings, so\u00a0we’re\u00a0narrowing\u00a0the\u00a0lens\u00a0on\u00a0purpose.<\/span>\u00a0<\/span><\/p>\n

In the\u00a0baking\u00a0world,\u00a0greaseproof\u00a0paper\u00a0is\u00a0valued\u00a0for one\u00a0thing\u00a0above\u00a0all:\u00a0its\u00a0ability\u00a0to\u00a0hold\u00a0back oil and\u00a0grease.\u00a0That\u00a0single\u00a0property\u00a0is\u00a0what\u00a0lets\u00a0it\u00a0wrap, line, and\u00a0contain\u00a0fatty\u00a0or\u00a0oily\u00a0food\u00a0without\u00a0turning\u00a0translucent,\u00a0soggy, or\u00a0weak.<\/span>\u00a0<\/span><\/p>\n

Paper doesn’t become greaseproof by accident, manufacturers get there through either a chemical treatment or a mechanical one. This time, the spotlight is on the mechanical route: <\/span>calendering<\/span><\/b>.<\/span>\u00a0<\/span><\/p>\n

Inside the\u00a0calendering\u00a0process<\/span><\/b>\u00a0<\/span><\/h3>\n

Calendering\u00a0is\u00a0essentially\u00a0paper\u00a0going\u00a0through\u00a0a workout. The\u00a0sheet\u00a0is\u00a0fed\u00a0through\u00a0a\u00a0stack\u00a0of\u00a0polished\u00a0metal rollers under heavy pressure,\u00a0sometimes\u00a0with\u00a0added\u00a0heat.\u00a0That\u00a0pressure\u00a0squeezes\u00a0the\u00a0fibers\u00a0closer\u00a0together,\u00a0flattening\u00a0the\u00a0surface\u00a0and\u00a0shrinking\u00a0the\u00a0paper’s\u00a0porosity.<\/span>\u00a0<\/span><\/p>\n

Less porosity means less room for grease and oil to travel through.\u00a0It’s\u00a0a purely physical fix,\u00a0no coating, no\u00a0chemical barrier,\u00a0just fibers packed tightly enough that fat molecules\u00a0can’t\u00a0find a way in.<\/span>\u00a0<\/span><\/p>\n

Where\u00a0it\u00a0all\u00a0started<\/span><\/b>\u00a0<\/span><\/h3>\n

Long\u00a0before\u00a0rollers and\u00a0steel,\u00a0papermakers\u00a0smoothed\u00a0sheets\u00a0by hand,\u00a0hammering\u00a0them\u00a0flat\u00a0or\u00a0squeezing\u00a0them\u00a0between\u00a0polished\u00a0metal\u00a0plates.\u00a0It\u00a0was\u00a0slow, and\u00a0results\u00a0varied\u00a0from batch to batch.<\/span>\u00a0<\/span><\/p>\n

Modern\u00a0paper\u00a0mills\u00a0replaced\u00a0that\u00a0manual\u00a0labor\u00a0with\u00a0continuous\u00a0rolling\u00a0systems. Rollers are\u00a0typically\u00a0cast\u00a0iron\u00a0or\u00a0steel,\u00a0gently\u00a0tapered\u00a0so pressure spreads\u00a0evenly\u00a0across\u00a0the\u00a0sheet, and some are\u00a0heated\u00a0to\u00a0protect\u00a0the\u00a0paper’s\u00a0thickness\u00a0and\u00a0rigidity\u00a0while\u00a0it’s\u00a0being\u00a0compressed.<\/span>\u00a0<\/span><\/p>\n
