The story of the Easter Colomba is a unique blend of ancient tradition and industrial innovation.ย  A product deeply rooted in Italian culture, the Colomba has become a seasonal icon worldwide, recognisable not only for its flavour, but for its unmistakable shape.

That shape, however, did not happen by chance.

Where does the Colomba come from?

The origins of the dove cake are still debated.ย  Some legends trace it back to a gift offered by the people of Pavia to King Alboin, while others refer to Saint Columbanus, the Irish monk who, during Lent, is said to have transformed meat dishes into white bread doves as a symbol of peace.

What is certain is that the dove has always represented prosperity, rebirth and harmony: values that have endured for centuries.

From tradition to commercialisation

The Colomba as we know it today entered the market in 1930, when Dino Villani, working for Motta, adapted the panettone recipe to create an Easter product with a strong symbolic identity. From that moment on, the Colomba began its transition from artisanal specialty to structured seasonal production, requiring consistency and process control.

A regulated product

In 2005, the Italian Ministry officially defined what can be called โ€œColombaโ€, setting strict requirements on ingredients and production, just as for Panettone.

This regulation confirms the Colombaโ€™s status as a high-value bakery product, where quality standards are non-negotiable and every component of the process matters.

Where paper meets bakery innovation

So where does paper come into play?

From the earliest large-scale productions, dove were baked in paper moulds, designed to:

  • support long and delicate proofing
  • maintain structural stability
  • ensure even baking
  • deliver a recognisable and repeatable shape
